To address the main concern about fan cooling: It should be fine to cool those by fans, the main issue will be which case they are all sitting in.

Regarding GPU, the 2GB version of the 6950 offers no performance gain over the 1GB version, and the 1GB version costs slightly more than a GeForce GTX560Ti which performs at the same level. In any case, don't get the 2GB 6950; either get the 1GB version or get a GTX560Ti if you're not averse to nvidia.

Regarding PSU, TTam's advice is good, but be careful not to take it as "skimp on PSU". Getting a quality PSU (whatever wattage you go for) is very important.

Just a little comment on audio - if you're using a USB headset most of the time, not getting an independant sound card is definitely sensible. If you're doing a lot of gaming or music through speakers, it might be worth considering spending 50 quid on a sound card. Asus Xonar DX is a nice one for ?55. Could could shave that cost off the ram... however I'm not so familiar with the new Sandy Bridge CPUs and whether they're designed to be used with dual or triple channel ram setups. 4GB of ram is fine, but I wouldn't be surprised if it starts feeling a little bit tight depending on what you do on your computer of course.

Oh, about a bigger monitor; thing is with that is that if you increase your native resolution (which is what you will want to game at unless you want black borders or a fuzzy picture), then you may begin needing a more powerful gpu. The 6950 or GTX560Ti will handle most things plenty fine at around 1920x1080, but 2560x1440 might drop framerates a bit below desirable levels.

Thing about 2GB 6950 is totally other then getting 1gb more . It's that 2gb version are mostly able to unlock to 6970 (with legit program)while 1 gb versions are not able to do so.

Well, if you're okay voiding the warranty that's no problem :)
